Alsacian pizza recipe – “Flammekueche”

It’s really an easy recipe, it’s actually a “flat pizza” because there is no yeast in the dough.

So you don’t need to wait hours until your Flammekueche base is ready. It’s one of my favorite meals, I hope you will give it a try and enjoy it as much as I do!
With this recipe, you will feed 2 starving friends or 3 hungry dinner guests and spend one hour in your kitchen (cooking time included).

Here are the ingredients (for two Flammekueches) :

Dough:
– 3 1/2 cups all-purpose flour
– 1 1/4 cup water
– 1 tea spoon salt
Topping cream :
– 4 1/2 cups natural yogurt
– 1/4 cup heavy whipping cream
– 2 egg yolks
– 1/2 tsp nutmeg powder
– salt, pepper
Other toppings :
– 2 big yellow oignons
– 12-15 slices of bacon
– Small amount of Swiss cheese (optional)

You have everything in your fridge? OK, let’s begin!
You will need a big mixing bowl, a cutting board and a rolling pin.

Combine 1 cup of the flour, water and salt in a big mixing bowl, stir until blended.

Add the remaining flour, little by little, until the dough is too stiff to stir.

Place the dough on a lightly floured work surface and begin kneading, add additional flour if the dough is too sticky. Knead until the dough is elastic and its surface smooth and soft.(You might not have to use all the flour)

Place your dough in plastic wrap, and put it in the fridge until the rest is ready.

In a clean mixing bowl, add the natural yogurt, heavy whipping cream, salt, pepper and nutmeg powder, stir until blended. Set aside.

Preheat the oven at 500 degrees and cut the oignons and bacon.

Take the dough out of the fridge, cut it in two halves, put one on a floured work surface and roll into a rectangle until it’s thin. Do the same with the other.
Put the flammekueche base on a baking sheet.

Bake for 20 minutes until the bacon is golden and the crust crispy.
